ENGLISH HINDI
Primary Ingredient and Description

BEVERAGES RAS, LASSI, ETC. Assorted drinks both savory or sweet

BREAD VARIATIONS ROTIS, ETC. Flat breads: Chappati, Roti, Puri, Paratha (various types), Kachoris

DESSERTS MEETAI There are loads of different kinds of desserts and kind of difficult to describe. Some are puddings, others bonbons both dry and in a sauce. All are very sweet and rich.

DUMPLINGS DUHEE BARA, KOFTA, KARHEE, ETC. 'Dumpling' is my rather arbitrary designation for a group of dishes whose similarity lies in mode of preparation, rather than ingredients. Some are grain based, some vegetable....but they all look like dumplings to me.

LENTILS DAL and SAMBAR Lentils are an excellent source of vegetable protein. Lentils are, however, an incomplete protein and should be combined with rice and different varieties consumed during the week, for a complete protein (or so I've been told). I'm not a nutritionist, so don't count on my limited knowledge to keep healthy. Do your homework! (And then email me and educate me too, she says with a smile).

SALADS RAITAS
and other
'COOLERS'
Salads are served with the meal, rather than at one end of it or the other therefore, they are not only healthy but may also cool the tongue overly heated from other dishes.

SNACK FOODS SAMOSA, PAKORA, CHUTNEY, ACHARES, ETC. (Pasties, Fritters, Condiments, Pickles, etc.)
Essentially these are salty tidbits that can be served as appetizers or, like chips and dip, as a snack.

VEGETABLES SUBGEE Vegetables prepared in a North Indian style, unless noted otherwise.
