Garam Masala | Garam Masala | Garam Masala in Eng. is 'hot spice' but it is not really hot, just incredibly aromatic. I've never heard the English translation used. Each area, indeed each family has its own version and jealously guards the recipe. It is available from an Indian grocery store, but packaged Garam Masala is just a pale imatation of the hand mixed version. I never knew this until my dear friend Asha gifted me with some she had made. Hers, is by far, the best I've ever tasted. As yet, I haven't wheedled the recipe out of her (but I haven't stopped trying). | ||||
Clarified Butter | Ghee | This used to be the cooking oil of choice in north India before people realized how unhealthy butterfat is. Although oil can be substituted for almost everything, there are still a few recipes that just taste a whole lot better with ghee. If there is an Indian store nearby, get a jar from there instead taking the time to make it. The taste is no different. |
