Clarified butter does not do good things to one's cholesterol level, but it can take high heat without burning and the taste is wonderfully rich. |

Ingredients:
1 or 2 lbs. unsalted butter Procedure: Simmer the butter in a pot. Every once in awhile remove the froth from the top. After the butterfat has completly separated from the curds (that opaque stuff at the bottom) strain the butter through a cheesecloth. Store in an air tight jar. Refrigerated, this will keep for some months. A more heart friendly oil can be substituted, but the taste will not be as rich. |
