Sweet green (capsicum) peppers are paired with potatoes.

Sweet Green Peppers

Ingredients:
2 tbs. oil
1 tea. salt (or to taste)
1/4 tea. cumin seeds
1/4 tea. red pepper
1/4 turmeric
1 large potato
3 med. sweet green peppers (capsicum)
1 tea. tomato paste or 1 chopped tomato
1/4 tea. ground, toasted cumin seed

Procedure:

Peel and chop the potato into 1" cubes, set aside. Cut the green peppers about the same size. Heat the oil hot enough that the cumin seeds pop when you throw them in the oil with the other spices. (Do so.) Stir the spices till mixed and coated with oil (be quick). Throw in the peppers and potatoes.
When the potatoes are soft, add the tomato paste or chopped tomato. Mix well and cook until the mixture is on the dry side.
Mix in a 1/4 tea. of ground toasted cumin before serving.

Serves 6 to 8. Pair this dry subgee with a wet subgee (veg. in a gravy or broth).
