Riata is used as a side dish to cool the palate when eating hot, spicy food. Essentially it contains whipped yogurt plus chopped or shredded vegetables.

Cup of whipped yogurt
Procedure:
Shred the vegetables.
*Good vegetable choices are: cucumbers,
shredded or chopped (the most traditional choice); shredded carrots,
chopped tomatoes; chopped onions; minced cilantro and/or mint.
Occasionally, finely chopped peanuts may also be added. All or any
of the chopped vegetables may be added to a chunky riata. Usually
riatas using shredded vegetables would use one or the other with
only cilantro as an additional garnish.
Serve with pita bread or chappatis, rice, meat....almost anything. |
