Riata is used as a side dish to cool the palate when eating hot, spicy food. Essentially it contains whipped yogurt plus chopped or shredded vegetables.


Raita

Yogurt Salad

Preparation time: 10 min.

Ingredients:

Cup of whipped yogurt
Salt to taste
1/2 teaspoon ground cumin
1/2 teaspoon of paprika and/or ground red pepper
*Vegetables, either chopped or shredded
(Try starting with 1 cucumber or carrot or tomato or 1/2 onion.)

Procedure:

Shred the vegetables.
When using shredded cucumbers, salt and then let the extra water drain, squeeze the water out and follow the rest of the recipe. Other vegetables do not need this step.
Mix everything together. Taste for salt. Decorate the top with a swirling line of toasted ground cumin and paprika or ground red pepper and a sprig of coriander (cilantro).

*Good vegetable choices are: cucumbers, shredded or chopped (the most traditional choice); shredded carrots, chopped tomatoes; chopped onions; minced cilantro and/or mint. Occasionally, finely chopped peanuts may also be added. All or any of the chopped vegetables may be added to a chunky riata. Usually riatas using shredded vegetables would use one or the other with only cilantro as an additional garnish.
The amount of ingredients used depends on number of people to be served. If it doesn't look like enough once you've made it, add more of whatever you like. Precise proportions are not important.

Serve with pita bread or chappatis, rice, meat....almost anything.
