Farmers cheese is scrambled with fried onions.

Scrambled Farmers Cheese

Rating: moderate (making the cheese is a pain)
Preparation time: Neither step takes long but the cheese is made one day and scrambled the next.

Ingredients:
  2 cups small curd farmers cheese
  1 small onion
  2 tbs. cooking oil
  1 med. tomato, cut into 1 in. cubes
  1 tea. coriander powder
  1 tea. ground cumin
  salt to taste (not very much)
  1/2 tea. red pepper flakes
  1 tea. fresh ginger slivers
  1 garlic clove (optional)
  1 tbs. tomato paste
  ground toasted cumin seed
  a few fresh coriander leaves (cilantro)

Procedure:

First make the farmers cheese on day 1. Making Paneer (That blank space is a link to 'Making Panir'...even if my comp. won't tell you so!) (Hit the back button to return to this recipe.) On day 2, cut the onion into cresants and fry in oil until soft. Add all the spices and mix well into the oil. Add the tomato paste and stir until the oil separates.
Add the cheese and a touch of water. Stir about 2 min.
Add the cubes of fresh tomato, cover and cook on low heat for 5 or 10 min.
Sprinkle the top with the toasted cumin and coriander leaves as a garnish.

Serves four as a hearty luncheon with chapaties or parathas.
