Yogurt dip, cool, refreshing

Neelam's Palak ka Raita
Neelam's Spinach Yogurt Dip

Ingredients:

  8 ounces or so of spinach (a good handful)
  1 green pepper (or more to taste)
  1 clove of garlic
  black salt
  Cummin powder
  1 1/2 cups of yogurt
Procedure:
Quickly wilt the spinach by boiling in just a bit of water, or pressure cook in a bit of water. Save water.
Grind the wilted spinach with the remaining ingrediants to a thick paste. Use as much of the saved spinach water as needed to get a full puree.
Mix the spinach puree into about 1 1/2 cups of yogurt.

Suggested: This is an excellent and healthy side dish for any Indian meal or all by itself with fresh parathas.
