Ingredients:
1 lb. fresh spinach 1 medium onion 2 tablespoon oil 1/2 teaspoon or less of salt |
Procedure:
Remove the tough stems from the spinach leaves and chop into 1 or 1 1/2 inch pieces. Chop the onion into less than 1/2 inch pieces. Fry the onions in the oil until soft and golden. Add the salt and spinach. Cook just until the spinach is soft. |
Suggested use:
Serves two for a luncheon dish, maybe four at dinner with other vegetables and a main dish.
