Ingredients:
2 cups loosely packed fresh coriander leaves (cilantro),
well washed
Procedure: Strip the coriander leaves from the stems. Discard stems and wash the leaves very well. Measure 2 loosely packed cups. Put in a blender. Cut the stem off the peppers, coarsely chop. Add to the blender with the rest of the ingredients. Grind to a smooth, thick puree. Serves as a condiment to pakoras and other 'snack type' foods. There are lots of other foods it complements. I mention which ones at the end of those recipes. This is very versatile and a staple condiment ranking in importance with yogurt. If you only learn how to make one chutney, this is the one. |
