This is a cross between a pudding and hot cereal.


Anta Halwa
Simple Whole Wheat Flour Porridge

Preparation time: 10 or 15 minutes
 
Ingredients:

3 heaping spoons of whole wheat flour (use Ind. flour*)
3 teaspoons of butter
white sugar to taste (no more than 3 spoons)

Procedure:

Melt the butter. Mix the butter and the flour until it is like a crumbly pie dough. In a dry pan, slowly toast this mix until it is golden brown. Add about 6 spoons of water until its kind of a loose sludge (like cream of wheat). Add the sugar. Add a bit more water until its a nice soft lump. (Now I'm not from the south US, but I'm told grits should aim for the consistency of grits.)

Serves two. This can be served as a dessert or used as a breakfast cereal. Feel free to throw in raisons or chopped nuts.
*I would imagine one could use any type of flour, but I've only used the whole wheat flour from the Indian grocery store. Indian flour is softer than our western hard winter wheat flour.
