Potatoes with Onion Greens

Preparation time:10-20 minutes, tops
Ingredients:
3 bunches of spring onion tops (those skinny ones with the grass-like
top, also called scallions. Most grocery stores sell them in
pre-tied bunches.)
1/2 teaspoon fenugreek
1 potato per bunch of onion greens, so 3 med.. onions,
dice sized cubes
1 teaspoon mango powder
1 teaspoon coriander powder
1 teaspoon salt (or to taste)
Directions:
Peel and cut the potatoes into dice sized cubes, chop the onion
greens into 1/2 inch size pieces. Heat oil (med.. heat) in a large frying pan.
Quickly toast the fenugreek seeds. They should pop almost instantly.
Immed.iately throw in the cut potatoes. Brown for about 5 minutes.
Throw in the rest of the spices and stir to coat the potatoes.
Throw in the onion greens. Cover and cook over a very low heat until
the potatoes are soft.
This is a dry subgee with no sauce.
Serve as a side dish to grilled meat or as an accompaniment to a wet dish
like a curry with sauce or lentils.
