This has a fresh, clean taste with a bit of heat from the red pepper and lots of snap from the ginger. |

Ingredients:
2 medium potatoes, peeled and chopped into 1/2" cubes
3 medium tomatoes, finely chopped
1/4" of ginger, peeled and cut into matchstick slivers
1 cauliflower, flowerets chopped to 1 1/2" (discard leaves, stem)
1 package (around 10 ounces) of frozen peas
1 tablespoon of ghee (clarified butter) or cooking oil
1 1/2 teaspoon salt
1/2 teaspoon red pepper
1/2 teaspoon tumeric
1 teaspoon mango powder (amcur)
1/4 cup chopped fresh cilantro leaves
Procedure:
In a deep pot, melt the ghee and heat to medium high.
Sprinkle a pinch of crushed red pepper and immediately throw in the diced potatoes
and stir for a minute, then throw in the rest of the spices and salt.
Stir for about 3 minutes and then throw in cauliflower. Stir the mix for about 2 minutes.
Add the diced tomatoes, peas and ginger. Stir for about one minute.
Lower the heat to meduim low and cover the pot.
Stir every 5 or 10 minutes until the potatoes are cooked.
Remove from heat. Mix in the cilantro just before serving.
This is especially tasty with puris (fried bread).
